Shrove Tuesday: Perfect Pancake Recipe
We love Shrove Tuesday; what could be better than a day where you’re encouraged to eat pancakes with abandon? This Pancake Day, cement your status as a star parent by following our guide to the perfect pancake.
Getting your pancake batter right is the most crucial part of the process as even the very yummiest toppings won’t do much if the pancake itself doesn’t taste great. To begin with, we always follow this foolproof recipe: Add 100g of flour and a pinch of salt into a bowl then make a little well in the middle and crack two eggs into it. Take 300ml of semi-skimmed milk and one tablespoon of vegetable oil and gradually add it to the mix whilst whisking to get rid of any lumps. When you’ve got a smooth, creamy finish, you’re ready to go.
The key to a great pancake is not adding too much mixture to your pan. After wiping a little oil around a frying pan, ladle in a small amount of batter and swirl it around to coat the pan evenly and ensure a light and fluffy pancake. Wait until the underside is cooked (this should take about 30 seconds) then get flipping!
Whether your family has a sweet tooth or a savoury one, our favourite thing to do on Pancake Day is to set up a DIY toppings buffet where everyone can help themselves – especially if we’re serving pancakes for dinner and dessert. If you’d like to do the same, here are some of our favourite toppings to include.
- Savoury – Cheese, tomato, mushrooms, roasted sweet potato, ham/bacon/sausages (or their veggie alternatives!), roasted sweet potato, roasted chickpeas, avocado, chorizo, garlic, spinach.
- Sweet – Any fruit you can think of (we love lemon, bananas, blueberries, strawberries, and rhubarb with custard!), chocolate (of course), peanut butter, ice cream, whipped cream, syrup, crushed nuts, sprinkles.
